- Chimney lit at 6:58pm
- Dumped at 7:15
- Did a better job spreading the coals
- Chicken on high side at 7:18
- Flip @ 7:20
- Moved to indirect 7:22 pm, lid on, vents open
- Skinny pieces hit temp and off at 7:28
- Bigger pieces still going at 7:45
- Cover off
- Everything done by 7:50
Still learning to control temp, but it felt good to leave the lighter fluid out!
